Swiss Chard
Chard is a member of the beet family and is rich in iron, calcium, magnesium, vitamin C and carotenoids. Grows well all season long and does not easily bolt and become bitter like lettuce does in the summer garden.
How to Prepare it!
Simply pick before stalks get to thick rinse well and place in a pan with a little water, chopped onion, garlic, clove and ham ends to season. Simmer or steam until wilted then using a slotted spoon squeeze out excess and serve with a pat of butter, salt and pepper.
